I contacted Lippert to confirm bearing sizes and it sounds like your 7,000-lbs axles have an outer bearing like Item # 14125A and an inner bearing like Item # 25580 and a 10-36 seal. Based on this information, I recommend the replacement Bearing Kit, Item # BK3-200, which includes bearings, races, grease seals, and cotter pin. For hub grease caps, I recommend Item # rg04-120.
The dust caps are sold separately so if you need them I recommend the Rubber Lube Plug, Item # DC-RP.

There are going to be 2 ways of confirming which bearings will be the correct replacements. Unfortunately, I was unable to find anything confirming which ones are used.
So with that being said, the quickest and easiest way will be to contact the manufacturer of the trailer with your VIN. This is something that they will have on file and should be able to tell you exactly which inner and outer bearings are needed.

The Bearing Kit for #84 Spindle, L44649/L68149 Bearings, 10-19 Double Lip Seal # BK2-100 comes with the seals compatible with your spindles. The double lip seals are a better seal and there are different part numbers simply because there are different manufacturer part numbers that are cross-referenced with different manufacturer part numbers for fit. Since you have 3,500 lb trailer axles from Lippert the correct bearing kit is the part # BK2-100. This comes with bearings, races, and a seal for each hub plus a cotter pin and tang washer. Or we have the part # DBRKHW35EZ which comes with the correct bearings, seals, lug nuts, and dust covers for both sides of a 3,500 lb axle like you have. There are two different Dexter 8-91 hubs that are available for a 2000 lb axle that will use different size bearings and seals. You will want to use the correct bearings and seal that are designed for that particular hub.

There isn't a kit available, but I was able to find each of the components you need, which are available individually. You will need bearing # LM67048 and matching race # LM67010, along with bearing # L44649 and matching race # L44610.
For a grease seal you need # 58846, along with grease cap # 21-41-1 and cotter pin # 165649.

I know it's not the news you want to hear, but the only safe recommendation I can make for you would be to find a place you can park your trailer, pull the hubs and get the seals and bearing numbers so we can get you the right parts. I know it's a pain and it leaves you with a trailer stuck on jackstands till you get the right parts but it's the only option.
Hexagonal caps that are threaded are typically used on oil bath hubs.

Based on the information you sent, it looks like your inner bearings are Item # L68149 and outer bearings are Item # L44649 which are common for 3,500 lb trailer axles. I did not see in part descriptions the bolt pattern of your wheels but the most common patterns are 5 on 4-1/2, 5 on 5-1/2, and 6 on 5-1/2. The Bearing Kit # BK2-100 should contain all the correct bearing, seals and races for 1 wheel. I always recommend pulling one hub apart and confirming the correct spindle. These fit the most commonly used axles under your 2014 Forest River R-Pod 179 but that is not a guarantee as manufacturers sometimes change components or the part were changed by a previous owner (See Picture and Article).

The Kodiak disc brake kit you are wanting part # K2HR35D can be used on your axle but you will just need to go with a different seal instead, part # 168255TB. This has the same outer diameter as what the hubs fit but instead has the correct inner diameter for your spindle size.
